ReplyDeleteLord have mercy girl how in the world do you create one thing so perfectly and it is in 6 different challenges ...... I am certain my brain does not work that way .... but i am a blonde so I do have an excuse. I forgot to tell you about the quesadilla's ...... must have been the patron rita's :) So I use a mexican seasoning on the chicken breast bone in with skin...... and I also season with powdered onion and garlic and some salt and pepper. I brown that up nice in some EVOO and then cover and put in the oven for about 15 minutes on 350.... with the lid on you are kinda poaching the chicken and it does not dry out. Oh before I do the chicken I cook some onions in EVOO and put to the side ..... when the chicken is going in the oven I put the onions back in. After I take it out I let it stand for some time and then pull from the bone and shred w/ 2 forks and mix in the onions and put bone sucking sauce on that and let it marry nice. I grill some pineapple on the grill and then put it all together in a whole wheat wrap with jack cheese. I put some EVOO on the top with kosher salt and bake at 450 until it is crispy so good with rice w/ knorr veggies soup and some sour cream!!!
ReplyDeleteThis is gorgeous, Bethie! Vintage and shabby and just a teeny bit grunge, in a good, Tim Holtz kind of way!
